Pasta, pizza and ice cream are all well and good, but I found there just weren’t enough eggs in Italy for my liking. To rectify this, I decided to have an eggstravaganza when I got home. The recipe is very simple and the results were mouthwatering. My meal consisted of:
- 4 devilled eggs
- 1 fried egg
- 1 poached egg
- 1 scrabbled egg
- A jacket potato with egg mayonnaise, ham and sweetcorn
- A ham and sweet corn omelette
